Don’t you just love a mug cake a quick easy treat when you are feeling like something sweet.

The 6 cakes are all gluten free, some paleo & LCHF/ Banting

Sprinkle cake ingredients

2 tbsp coconut flour

¼ tsp baking soda

pinch of salt

1 egg

2 tbsp coconut oil, melted

2 tbsp maple syrup

1 tbsp coconut milk

½ tsp vanilla extract

1-2 tsp sprinkles (optional), India Tree makes naturally coloured sprinkles

Peanut Butter Mug Cake

Ingredients:

2 tablespoons coconut flour

¼ teaspoon baking powder

1 egg

2 tablespoons natural peanut butter*

1-½ tablespoons melted coconut oil

1-½ tablespoons maple syrup (or other liquid sweetener)

1 tablespoon coconut milk (or almond milk)

¼ teaspoon vanilla extract

optional: chocolate chips

Banting Chocolate mug cake

1 Egg

1 tspVanilla Essence

1 Tbsp Melted Butter

1 TbspCocoa

2 Tbsp Desiccated Coconut

2 Tbsp Xylitol

1/2 tsp Baking Powder

Choc chip mug cup 

Ingredients

1 scoop vanilla protein powder (32-34 grams)

1/2 tsp baking powder

1 T coconut flour

1 T granulated sweetener of choice*

1 large egg OR 1/4 cup liquid egg whites (see notes for Vegan option)

1/4 cup milk of choice (I used unsweetened almond)

1/4 tsp vanilla extract

Chocolate chips to top (optional)

Cinnamon roll mug cup

Ingredients

1 scoop vanilla protein powder (32-34 grams)

1/2 tsp baking powder

1 T coconut flour

1/2 tsp cinnamon

1 T granulated sweetener of choice*

1 large egg OR 1/4 cup liquid egg whites (see notes for Vegan option)

1/4 cup milk of choice (I used unsweetened almond)

1/4 tsp vanilla extract

1 tsp granulated sweetener of choice

1/2 tsp cinnamon

For the glaze

1 T coconut butter, melted

1/2 tsp milk of choice

pinch cinnamon

One-Minute Flourless Chocolate Mug Cake

Ingredients

2 tablespoons almond butter

1 tablespoon Blue Diamond Hint of Honey Vanilla Almond Milk

1 tablespoon honey (add another 1/2 tablespoon if you need more sweetness)

1 egg

1/2 teaspoon vanilla

2 tablespoons cacao powder

1/2 teaspoon baking powder

chopped nuts (optional)
